
Can you read it? I got this recipe from the PA at Jaron's 9 month check-up. I'm not exactly sure how we got on the subject of steel cut oats but next thing I knew she was jotting down a recipe that she had found in Cook's Illustrated (great mag by the way!). She said it was the best way to make steel cut oats. We've made it this way ever since. Well, I always have to make a recipe my own so I guess I should say that we've used it as a guide ever since.
So here's our version:
In a medium saucepan melt:
2 T Butter
Add and saute until nutty:
2 c Steel Cut Oats
Add and simmer uncovered on low:
2 c Water (half of the above recipe - 4 c just makes it a lot soupier that we like - at most I'd add 2.5c)
2 c Almond Milk
Take off heat, add:
1/2 to 1 t sea salt
Let sit for 5 min.
Blueberries, chopped walnuts and real maple syrup are our favorite toppings!
